In Genesis 2:7 God breathes into man and he becomes a living soul, so what you have is a simultaneous action: God takes the dust of the earth, forms man, and the formation includes God breathing the breath of life into him. There is the spiritual, and man becomes a living soul. We assume from that simultaneity that there is no break or gap between the creation of the physical body and the creation of the soul; they happen at the same time. So Genesis 1:26 is not your ultimate piece of information by itself; you have to combine it with Genesis 2:7 and understand that both body and soul are created at the same time.
