If that is your position, then I would say you are not really following the Catholic Church, because you are picking and choosing. Your mistake is making Polycarp your authority; Polycarp is not the pope, and whatever he did about Passover he did on his own, not because the Church told him to keep the Sabbath. He is a witness to authority, not the authority himself. The deeper point is that the Sabbath does not exist any longer. It belonged to the old covenant, which has been revoked, so we no longer have a Sabbath; we have a day of worship we call Sunday. The Church changed the day, which you can see in Acts 20:7 and 1 Corinthians 16:1-2. So do not build a doctrine that the Sabbath is not Sunday by depending on Polycarp; take everything the Catholic Church teaches rather than picking what you like.
