It is all theory. They do see white dwarfs and red giants, but the claim that a star evolved from one to the other over billions of years is an assumption their theory requires. As far as we understand it, working with only six or seven thousand years, God made the white dwarf a white dwarf, the red supergiant a red supergiant, the yellow star like our sun, and the neutron stars, all at once. The evolutionist cannot allow that, so he presents a snapshot and says here is a star forming, but even in his own theory that process would take millions of years, so a single snapshot cannot show it, any more than a dark disk ringed by a filament of light proves a black hole rather than a hole you could pass through. The clearest evidence against them is the James Webb telescope: like the Hubble before it, it sees fully formed galaxies out at the supposed edge of the universe, where, if the Big Bang were true, there should only be the scattered raw material first spewed out, like flour and salt strewn across a table rather than a finished cake. Fully formed galaxies there mean they were formed instantaneously, which points to creation. Our view is scientific too; we simply start with the right premise, that nothing can make itself.
