Why doesn't the seventh day of creation end with 'evening and morning'?

It does end with evening and morning; it is just not a creation day, it is a rest day. In the six days of creation God gives you the phrase evening and morning so there is no question in your mind that each is a twenty-four-hour day, running from evening to morning, not thirty-six hours, not a month, not a year. On the seventh day God is not creating, so there is no calibration of time needed, because nothing is being made; everything is now at rest. Some people try to say that means the seventh day is open-ended and runs into eternity, but it does not. If you want to treat the Sabbath spiritually or figuratively, you can do that, but not with the historic seventh day, which ended in evening and morning just like every day since. The reason God attached evening and morning to the first six days is that He anticipated people would come along and say the days are not twenty-four hours, so He fixed that problem in advance, and nobody can honestly say the days are not literal.
